Banana Bread

I love baking banana bread and so does my toddler! Baking banana bread is a fun way to introduce toddlers to the joys of cooking and baking.

Banana Bread




Ingredients
3 large very ripe bananas, mashed (my toddler loves to mash bananas)
1/2 banana finely chopped
1 cup yogurt (or sour cream)
1/4 cup butter, melted
1 cup white sugar (or 1/2 cup white sugar and 1/2 cup brown sugar)
1/4 cup honey
2 eggs
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/4 teaspoon salt
1 tsp cinnamon powder

Preheat oven to 350F. Grease and flour one 9x13 inch pan, or two 7x3 inch loaf pans.

Combine flour, salt, baking soda, baking powder and cinnamon powder. In a separate bowl mix yogurt, honey and mashed bananas (toddler can help with the mixing). In a large mixing bowl cream together butter and sugar. Add the eggs and beat till blended. Add finely chopped bananas, vanilla extract and banana-yogurt mixture. Stir in the flour mixture. Spread the batter in to the pans and bake for 45-50 minutes or until a toothpick inserted into the center of the bread comes out clean.
